Tomato, Basil and Mozzarrella Salad: Tomatoes a la Caprese

basil-tomato-mozzarrella-saladHere's my wife's easy recipe for the tomato, basil and mozzarella cheese salad.  She serves it as a side dish or light lunch. (Restaurants call it Tomatoes a la Caprese-I call it good salad) It's one of my favorite ways of eating tomatoes and the basil from our container garden.

Ingredients

2 large tomatoes, sliced (or cherry tomatoes
Fresh basil, leaves carefully chopped as not to bruise
Fresh skim milk mozzarella cheese, sliced (maybe called buffalo mozzarella in your store)
Extra virgin olive oil ( This adds a heart healthy touch)
Balsamic wine vinegar (optional, adds a nice kick to the salad. can also use fig vinegar)
Salt and pepper to taste

Preparation

Assemble the salad with slices of tomatoes, basil leaves, and mozzarella slices. Sprinkle extra virgin olive oil over the salad. Add a dash of vinegar(optional) and a very light sprinkling of salt and pepper. Serve immediately.
